The theme of this week’s Publix for Pork Good and Good for You Challenge is Healthy Comfort Food Dinners. It couldn’t come at a better time in my house. We all seem to have a nasty cold that just won’t quit. For this week’s pork dinner, though, we did a little something different and invited friends over to a grownup meal after the kids were in bed. It was so nice to enjoy this yummy comfort food with friends. The only downside? With four adults eating there were no leftovers!

Pork Cutlets with Creamy Blue Cheese Dressing Recipe

Ingredients

  • 4 boneless pork cutlets
  • 1/3 cup flour
  • 2 tablespoons butter
  • 2 tablespoons extra-virgin olive oil
  • Sea salt and freshly ground pepper

Dressing Ingredients

  • 1/4 cup blue cheese, crumbled
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 2 tablespoons fresh lemon juice
  • Sea salt and freshly ground pepper

Directions

To make dressing: Put cheese, sour cream and mayonnaise in a small bowl and stir together with a fork, mashing a little to break up the cheese. Add lemon juice and season to taste with salt and pepper. Set aside.

Pound pork with a flat meat mallet or the bottom of a heavy saucepan to flatten. Put flour on a dinner-size plate and season generously with salt and pepper; mix with a fork to distribute seasoning.

Melt butter and oil in a large skillet over medium-high heat until hot. Dredge pork in the seasoned flour, pat off the excess. Add cutlets to hot oil and fry for 2 minutes on each side until golden brown, turning once.

Transfer to warmed dinner plates. Drizzle blue cheese dressing all over the top and serve with lemon wedges.

Makes 4 servings.

Challenge Results

This dinner was really good! First we had a Blue Cheese Wedge Salad and then we enjoyed the Pork Cutlets with roasted red potatoes. Admittedly, the meal as a whole might be a tad heavy on the blue cheese, but if you love it as much as my husband and I do then that’s not a concern.

For the last four weeks we’ve experimented with a new recipe using a cut of lean pork. We had our favorite (Tenderloin Medallions with Lemon Garlic Sauce) and not so favorite (Pork Roast with Sweet Potatoes and Pears). I’ve tried new recipes using new cuts of pork that I previously found really intimidating. I’m excited to have expanded our horizons a bit and I know that I’ll incorporate pork into our meal plans more after this challenge. If nothing else, the Tenderloin Medallions will certainly be part of our regular meal rotation – so good!
